Salads Classes (June 29th & 30th)& BBQ Class (July 1st)

I’ve got a big announcement! I usually take the off summer through October from teaching my classes but since I just came back… I’m teaching more classes in June! GNXXCBFN43996013

The first two classes have been my most popular of classes… A Salads class! ( If you’ve had any of my salads… you’ll know why they’re so popular!) The dates for these classes will be June 29th and 30th. The menu for this class will include: The most amazing, bursting with flavor Chicken Chopped Salad with a Pickled Garlic Vinaigrette… A Chopped Wedge Salad with Caramelized Pork Belly (the pork belly alone will knock you off your feet!)… A Kale Salad with an Apple Cider Vinaigrette (another fave of mine!)… My Guiness Brown Bread with a Vanilla Butter (Brown bread heaven!) and an Orange Almond Cake (that’s completely gluten free and the most moist and flavorful cake ever!).

And I’m offering one more class.. A Grilling Class where I will be re-teaching some of my top favorite dishes. I know.. I don’t often go back to re-teach some of my amazing dishes. It’s about time after many requests from you all! We will be teaching on our @traegergrills (but don’t worry if you don’t have one … … we will teach you how you can make it on your regular grill or oven as well)… our fave mode to grill! The Menu for this class will include: The most tender Pork Tenderloin with a Balsamic Glaze, Broccolini with Crispy Prosciutto, Burrata Cheese and Stone Fruit Salad (a huge crowd favorite!), Honey Whole Wheat Loaf and for dessert… my all time fave… my Mango Coconut Tart.

We (my hubby and I) will be teaching this class on Saturday, July 1st. Talk about a perfect date night!

You’ll want to make and eat these recipes all summer (or all year) long! These dishes are also perfect for entertaining and serving a crowd.

Tuscan Lasagna Class – May 25th & 26th

Hello Friends,

Wow… I was supposed to teach this class THREE (!!!) years ago back in March 2020. But the whole world got turned upside down and shut down. But here we are and not only am I ready to teach this class… but it’s going to be one of my most epic classes everrrr! And I mean EPIC!

Why you ask? Well… to celebrate my return to teaching these classes that I love… I reached out to many of my favorite companies and people and they are donating their wonderful products that we will be giving away throughout each class. So… not only do we all get to enjoy being together again, learning some amazing dishes and feasting together but on top of that… EVERYONE will go home with an amazing gift donated by one of my wonderful sponsors or me! I did a couple of classes like this in the past at Christmas time but this will far surpass even those classes!

Now to get back to the class menu, here’s the original class post:

And I’m finally ready to teach an amazing Almond Cookie Cake (a cross between a biscotti and a cookie.. perfect for your after dinner drink… hot or cold) that I get every year from an incredible Italian bakery in Miami Beach. Yes… this class is chock full of flavor and favorites!

Mexican Rolled Porkbelly Class

Hello Friends,
I can’t wait to teach you all this epic menu! Mexican food is one of my favorite cuisines….. such amazing flavors! I’ve got a menu that will blow your socks off! This menu was on repeat at our house… we couldn’t get enough!
Let’s talk about this Mexican Stuffed Rolled Pork Belly. The flavors are unreal… and even better when served with the Green Sauce (You will want to put this sauce on everything!) and put inside a tortilla… best taco in my life! And feeds a crowd easily! I served this at our Christmas party and I loved seeing everyone go back for fourth… even fifth helpings! You seriously can’t get enough! And there just isn’t anything like homemade refined beans. The  creamy texture and flavor can’t be beat! This Avocado and Orange Salad is the perfect accompaniment to this menu and complements the flavors perfectly. And there aren’t words for how good this Mexican Sweet Corn cake is!

Roast-tisserie Chicken Class

Hello Friends,
Sorry friends…. I forgot to mention the date this class will be held. I originally was going to hold this class on January 9th, but am changing the date. This class will now be held on Thursday, January 23rd at 5:30 pm. 
Happy New Year to you all! A new year deserves the best beginning so I am starting off 2020 with an extraordinary menu! Rotisserie chicken offers the most tender meat, but most of us do not have a rotisserie… not even me. So I came up with an incredible faux rotisserie chicken … hence the name.. Roast-tisserie Chicken… that is roasted in the oven.. and is just as moist and flavorful. Every chicken eating lover needs this recipe in their life!
During my travels the past few months…. I have had a lot of incredible dishes that I had to recreate. The rest of the dishes in this menu are inspired from different places. I had the most incredible Sweet Potato Mash… creamy with a hint of cinnamon and just the right amount of sweetness. You know I love a good salad and this Baby Kale Salad is good enough to make the cut. So good! In New York City, I had a huge pan of Honey Butter Rolls that I could’ve dusted off all by myself… it fed my inner “FOODALISM” animal self! I am happy to say that I was more than successful in recreating these pillows from heaven! And finally… I am teaching a dessert that you will die (well… died and went to heaven) over! At least the people in my last class did when I served them this as my taster.
Seriously… words cant adequately describe just how good this menu is! So here it is…. the first menu for 2020:

Italian Inspired Class #2

Hello Friends,
Italian Inspired Class #2 is what’s next in my kitchen! I couldn’t fit all the amazing dishes I want to teach you in one class so I am offering another class with the most delicious dishes from Italy! Of course, they too, are perfect for the holidays and for feeding a crowd. I actually saved some of my favorite dishes for this class because it’ll be in December with the holidays right around the corner. That calls for some pretty special dishes and class!
Have you ever had Caponata? Let’s just say it’s one of the best appetizer/ side dishes ever! Whenever I serve it, it always is the favorite dish on the table. It goes amazing on bread, meat, seafood or chicken, a potato or just by itself. It’ll become a staple in your home! Now let’s talk about Roman Gnocchi… it’s nothing like the gnocchi you know and love and I have to tell you it’s WAY better and way easier to make…. win win! While at the cooking school, we were served roasted eggplant steaks with a house made tomato sauce and mozzarella cheese and I couldn’t get enough! And guess what? I’m not a big fan of eggplant! Yes… it really is that good! And lastly, my favorite gelato while in Italy was pistachio gelato… so of course I had to work on it to teach it to you! Yum!
On the menu this go around is: Roman Gnocchi with a Browned Butter Sage Sauce, Kale Salad with a Lemon Vinaigrette (no comment necessary… because you all know about my salads!), Roasted Eggplant with a Homemade Tomato Sauce and Mozzarella Cheese, Caponata and Pistachio Gelato. Delizioso!
My December classes are extra fun and special! I started a new tradition a couple of years ago and started to draw names of people in my class to gift them some of my favorite kitchen things. Yes.. that tradition will continue this year!

Italian for the Holiday Part 1

Hello Friends,
The season of gatherings, the best feasts and parties are upon us. Makes me giddy! I know many of you don’t feel the same way as I do. Not sure of what to cook… how to feed a crowd… not confident in your cooking skills… etc. This next class will solve all those issues… the best dishes for everyday or a feast for a crowd. We all need these in our life!
As you know… last month I spent some time in Italy at a culinary school in Tuscany (Saporita Toscana… amazing experience!), Florence and Rome and boy did I feast on amazing food! I couldn’t wait to get back to my kitchen to recreate or work on my some of the dishes I learned with my own twist. One of the amazing dishes we learned at the cooking school was Porchetta… an Italian classic dish served for the holidays. And just like our Thanksgiving turkey.. the leftovers make the best sandwiches… and I mean THE BEST! Next … let’s talk about the potatoes… Italians know how to make the best potatoes ever! So flavorful with a huge wow factor… and these ones are the perfect accompaniment to porchetta. Now… can we talk about Foccacia di Recco? This is nothing like foccacia bread that we are all familiar with… this is something from bread heaven. Very thin dough, sandwiching the creamiest blend of cheese, and baked until perfection! Trust me… you all will flip over this one! And lastly.. I am finally teaching the absolutely best lemon cake ever. And I say that with all the confidence in the world! I cannot wait to teach you all this goodness and just in time for feasting season!

Hello Friends!

The date is set for my 2020 culinary trip to Italy! I am inviting anyone that would like to join me to come with! I know many of you said you wanted to join me next year. A dreamy week of the best food ever (no exaggeration!), daily Italian cooking lessons (learning how to make more dishes that you can count… including of course, fresh pasta, wood fired pizzas, gelato, more amazing desserts and so much more!), a day of hunting truffles that includes a “truffle everything” lunch to follow (it was seriously my dream come true meal!) and daily tours to beautiful towns throughout Tuscany (this year will include Lucca, San Gimignano, Siena, possibly another town or two and Parma (the town famous for parmigiano reggiano cheese and proscuitto! We will visit places where they are made and be treated to an amazing, authentic “Parma” meal!)… the beauty and charm of these towns will blow you away!)! Yes, it really is as amazing as it sounds.. that is why I am returning for another year!

The name of the cooking school is Toscana Saporita and the classes are taught by Sandra Lotti (a James Beard award winning chef who is super fun, funny, endearing and the amazing instructor and owner of the school,) in the town of Massaccuoli, Italy. You can find reviews of the school on Trip Advisor. I am not one to repeat trips, but I have had such a phenomenal time each year and want to explore more places in Tuscany… so I am returning again for the fourth time! The experience is that amazing!

In case your wondering…. the school is for beginners to skilled cooks. Or even for those that just want to feast on amazing, authentic Italian food and explore Tuscany at its best with a local to show us things that we wouldn’t experience on our own.

Here is the low down so far. I am booked to go the week of September 12th – 19th.We are able to add an additional day next year! With Italy being 8 hours ahead, I will be flying to Florence (I won’t book my flights until a little closer to the date, but will let you know my flights in case you want to be on the same flights), a couple of days beforehand, spend a day and a half in Florence (first, because I adore Florence and second, its less expensive to fly to Florence than directly to Pisa.. win win!), stay a couple of nights in Florence and take a short train ride to Pisa Saturday evening where we will be picked up (arranged by Toscana Saporita) and taken to their school. The cost for the week is $3190.00 (you will need to send a non refundable deposit ASAP of 600.00 to reserve your spot), which includes all transfers to and from Pisa (either the train station or airport), accommodations on their estate (double occupancy, there is an additional fee if you want single occupancy), cooking classes, all your meals and daily tours exploring Tuscany, including the day of truffle hunting and eating! For those of you that drink… all wine is also included with your dinners. Male and female, single or couples are all welcome. I am hoping my hubby can join me again this year! And I am looking forward to an amazing time with you! We have such a great time as a group all week! The spots go quickly and there is a limit to how many she will accept for the week.
